Coconut Loaf cake





Coconut loaf cake is simple to prepare and it is perfect for parties. You can enjoy this cake with tea and coffee. This Cake recipe is super easy, tasty and moist with a lovely golden brown crust. If you love the flavour of coconut then you are going to love this cake because you will feel the taste of coconut in every bits of cake. I hope you will enjoy this recipe, so let’s get started


Preparation time – 10 min
Cooking time – 45min


Ingredients
½ Cup of Unsalted Butter (at room temperature)
1 Cup of Caster Sugar
2 Eggs
1 Teaspoon of Vanilla Extract
2 Cups of Self Raising Flour
1 Cup of Desiccated Coconut
1 Cup of Milk

Method
Preheat oven to 375 degrees F (180 degrees C) ,Place a baking sheet in a loaf pan and keep it aside
In the bowl of your electric mixer, or with a hand mixer beat a butter and egg together until soft
 Add sugar and vanilla extract and beat it until light and fluffy. 
  Then alternatively add flour ,coconut and   milk
 Transfer the batter in a loaf pan and  bake for about 40 to 45 minutes or until a toothpick inserted into  a cake just comes out clean
 Remove from oven and let it to cool completely.
 Cut into a thick slices and serve it with tea or coffee.
