Ingredients
½ Cup of Unsalted Butter (at room
temperature)
1 Cup of Caster Sugar
2 Eggs
1 Teaspoon of Vanilla Extract
2 Cups of Self Raising Flour
1 Cup of Desiccated Coconut
1 Cup of Milk

Method
Preheat oven to 375 degrees F (180 degrees C) ,Place
a baking sheet in a loaf pan and keep it aside
In the bowl of your electric mixer, or with a hand
mixer beat a butter and egg together until soft
Add sugar and vanilla extract and beat it until
light and fluffy.
Then alternatively add flour ,coconut and milk

Transfer the batter in a loaf pan and bake for about 40 to 45 minutes or until a
toothpick inserted into a cake just comes out clean
Remove from oven and let it to cool completely.
Cut into a thick slices and serve it with tea or
coffee.
